Brown Rice with Peas & Goat Cheese

The toasted almonds give it an amazing crunch with beautiful flavor. This is a wonderful addition to just about any dinner and it keeps well in the fridge for days.

Once peas come in to season in the spring this will be a phenomenal dish to serve, but for now I am making this during the blizzard of 2015 out of pure boredom and the fact that I had all these ingredients already in the cupboard!

To toast the almonds, spread them on a baking sheet and bake at 350 for 8-10 minutes, or until browned.  This will give the dish a boost of flavor, texture and healthy fats.

The soft, mild texture of the goat cheese allows the dish to come fully together, creating a creaminess that you won't be able to get enough of.

I recommend adding some fresh mint or chives to this if you have them, it would really amp it up.  Of course with the blizzard outside my window however...that won't be happening for me!

Brown Rice with Peas & Goat Cheese
Serves: 4
Ingredients
  • 1 C brown rice, cooked according to package directions
  • 1/4 C toasted sliced almonds
  • 1 C green peas
  • 2-3 handfuls of goat cheese, crumbled
  • zest of half a lemon & juice of half of one lemon
  • salt and pepper to taste (start with 1 tsp each)
  • 1 TBS olive oil
Instructions
  1. Combine all ingredients together and serve immediately. I added another teaspoon of salt to taste but this is up to your own taste buds.
