Week 2 – $51.95

Since it's summer and all those lovely fruits and vegetables are in season, I can't help but stock up!

Blueberries, tomatoes, strawberries, peaches, cucumbers, squash, asparagus...all on sale!  For this whole week I have been enjoying fresh meals with lean proteins, whole grains and healthy fats all for $51.95.  It's also important to note that I did all of my shopping at Trader Joes this week which offers unbelievable prices on just about everything.

I've done some research on them and they TJ's has extremely high standards for what they allow in their stores, so I feel confident in what I'm buying.

So here's the breakdown:

The Meals:


Oatmeal with half a mashed banana and sliced almonds

fried egg sandwiches with rye bread

coffee with organic french vanilla half and half (my new fave obsession!)


Romaine salad with cucumber, tomato, feta (I had some leftover from last week) and either shredded chicken or sauteed shrimp with an olive oil & balsamic dressing


Nonfat greek yogurt with sliced almonds, fresh blueberries and sliced strawberries

sliced peaches or banana

roasted veggies


Tequila & Lime Shrimp with Roasted Summer Vegetables

Savory Peanut Sesame Chicken with Roasted Vegetables and Rice

Chicken Quesadilla's with Green Chiles, Roasted Corn and Pepper Jack (I had these Wednesday night and Friday night).  In a saute pan, heat olive oil and cook sliced and trimmed chicken until cooked, seasoning with your favorite spices.  Add in about 1/2 cup roasted corn and 1 can green chiles and cook for 5 minutes.  Lay out a whole wheat tortilla and sprinkle some cheese over one half of the tortilla, then spoon some chicken mix over the cheese.  Fold the tortilla in half then place on an oiled and heated pan.  Turn the quesadilla over once the first side is browned and slightly crispy, then remove and eat when the other side is finished as well.

Chicken & Roasted Vegetable Pesto Penne (simply shredded chicken tossed with some roasted veggies, penne and pesto sauce - easy and quick, especially if you prepped ahead of time)

Sliced Almonds - if you don't have them already, you can find them for a great price at Trader Joes.

What I Bought:

Unfortunately it looks as though I misplaced the receipt from my shopping trip, but please be assured this whole list can be done at TJ's for $51.28 (maybe a little more or a little less depending on where you live)

1 bag frozen shrimp

Organic French Vanilla Half & Half (this was actually bought at Whole Foods)


nonfat greek yogurt

4 bananas

2 peaches

1 bag frozen roasted corn

1 bag organic whole carrots

1 bag sweet mini peppers

1 lb asparagus

1 yellow squash

1 zucchini

Week 1: $52.98

Yes that is exactly how much we spent this week on groceries and I am thrilled! A few things we already had though that you might need to add to your list:

  • half a vidalia onion

  • leftover steak in the freezer

Black Bean Cakes with Corn Salsa

5-Ingredient Mexican Chicken Soup

Pork Chops with Apricot-Jalapeno Jam & Smashed Carrots & Sweet Potatoes

Grilled Steak with Corn on the Cob - use a simple black pepper and sea salt seasoning on the steaks, then serve with BBQ sauce.

Cajun Chicken Sandwiches with Roasted Carrot Fries - grab a bottle of cajun seasoning, sprinkle over the chicken, grill it then serve it on a toasted bun with lettuce and tomato.

Week 1 Grocery List Game Plan

Below is my list with the cost of each ingredient and why I bought it:  


Multigrain Loaf, $1.50.  Use it for PB&J, Egg Sandwiches, the Cajun Chicken Sandwich

Dairy: 1% Milk, $3.79.

Desserts:   40 Calorie Fudgicles, $1.00 (on sale), Hershey's Dark Chocolate Chips, $2.89.

Grocery: 1 Can Chopped Green Chiles, $1.00 - for the black bean cakes,

1 36oz low sodium chicken broth, $2.00.  For the 5-Ingredient Mexican Chicken Soup

1 jar Mrs.Refrenos Salsa Verde, $2.99 (on sale).  For the 5-Ingredient Chicken Soup

2 cans 15oz black beans, $0.69 each.  For the black bean cakes

1 Jar apricot preserves, $1.89.  For the Pork Chops

1 can 16oz cannelini beans, $0.69.  For the 5-Ingredient Mexican Chicken Soup

1 jar grape jelly, $1.79.  For the PB&J sandwiches

1 large container of Old Fashioned Oats, $1.99.  For breakfasts

Meat: Pork Chops, $3.56.

1 package of 5 skinless chicken breasts, $7.48 (on sale).  Use for the 5-Ingredient Mexican Chicken Soup & the Cajun Chicken Sandwiches. Produce:

Cilantro, $0.99.  For the corn salsa over the black bean cakes and the 5-Ingredient Chicken Soup.

1 pineapple, $2.99.  For snacks

2lb Strawberries, $3.99 (on sale).  For snacks.

2lb carrots, $1.99.  For the carrot & sweet potato mash and the roasted carrot fries.

4-pack of tomatoes, $2.49.  For salads at lunch.

1 large jalepeno pepper, $0.16.  For the pork chops.

2 limes, $0.50 each (on sale).  For the corn salsa.

1 small red onion, $0.43.  For the corn salsa

1 bunch scallions, $0.99.  For garnishing and adding flavor or crunch to a dish in need.

1 small red pepper, $1.00.  For the corn salsa and salads.

5 ears of corn, $2.00 (on sale).  For the corn salsa and sides for other meals.

2 small sweet potatoes, $1.00.  For the carrot-potato mash.

UPDATE:  I messed up...but I'm learning!

The strawberries I bought were mushy and pliable bad.  Yuck!  So I headed back to the store and got 2 pints of blueberries for $4.99 (on sale, and that was the price for both together), some baby carrots and mini Wholly Guacamole.  This upped the bill another $10.00, so for this week I ended up spending $60.58, which I am still going to chalk up to a good deal since we typically spend anywhere from $100-$150 a week!

For everyone else using this list, just be sure to check your produce and fruits thoroughly before buying so you know what is good and what is not.
