Turkey Taco Chili

Serves: 5-6
  • 1 lb lean ground turkey
  • 1 TBS vegetable oil
  • 1 large onion, chopped
  • 1 large red bell pepper, chopped
  • 1 TBS garlic, minced
  • ½ packet of Trader Joes taco seasoning to start, you can add more for flavor later if you want. If using another brand like Old El Paso, use the whole packet, the TJ's ones are bigger which is why I start with half
  • 15 oz can tomato sauce
  • 1 can rotel
  • 1 16 oz can fat free refried beans
  • 2 C low sodium chicken broth
  • 1 16 oz can red kidney beans, drained and rinsed
  • 1 16 oz can black beans, drained and rinsed
  • scallions, sliced
  • cilantro, chopped
  • sharp cheddar cheese, shredded
  1. In a large pot, heat oil over medium-high and add turkey, cooking and breaking it up into pieces with a wooden spoon.
  2. Once turkey is cooked through, add onion, pepper, garlic and taco seasoning. Str to combine, and let that cook about 5 minutes to cook down slightly.
  3. Next, add tomato sauce, rotel, refried beans, broth, red beans and black beans. Stir to combine, then bring to a low simmer. Cover and cook 15-20 minutes.
  4. Garnish with scallions, cilantro and/or shredded sharp cheddar cheese.
