Coconut Chia Seed Pudding

This is a great snack when you want something sweet. Chia seeds are a powerhouse of nutrition. They are an excellent source of omega 3-fatty acids which help lower blood pressure, rich in antioxidants and full of fiber, calcium and iron.
Ingredients
1/2 C coconut milk
1/2 C organic chia seeds
1 tsp vanilla extract
1 TBS coconut sugar
Directions
Whisk all ingredients together and transfer to 2-3 small servings bowls, then let them chill in the fridge for at least an hour. They will be ready when the chia seeds have set with the liquid, making a custard style texture.
