Coconut Nut Bites
Lesson 5
Ingredients
1 8 oz. package of dates, chopped
1/2 C coconut sugar
1 TBS water
1 tsp coconut oil
1 tsp vanilla
1/2 C chopped pecans or any other preferred nut
1/2 C chopped dried figs, goji berries and/or apricots
1/4 C unsweetened coconut flakes
Directions
1. Chop dates and put them in a frying pan with water, coconut sugar and coconut oil. Cook down for 10 minutes, stirring on medium-low until they cook down. Once bubbling and paste-like, turn off heat and stir in vanilla. Let cool for a few minutes.
2. Stir in chopped nuts, coconut flakes and 1/4 cup dried fruit.
3. Transfer to a cutting board or parchment paper to let cool enough to handle.
4. Roll into bite size balls and roll in dried fruit
