This is a great make-ahead meal prep idea that you can store in the fridge and bring to work or heat up fast for breakfast. It's delicious hot or cold, making it a great on the go meal. Best part - your house will smell amazing while this is cooking!

1. Preheat the oven to 375 and grease a deep baking dish with coconut oil.
2. In a large bowl, combine oats, walnuts, cranberries, coconut flakes, chia seeds, cinnamon, baking powder and salt together. In another large bowl, whisk milk, eggs, vanilla, maple syrup and coconut oil together. Slowly add the dry ingredients in with the wet ingredients, and stir to combine.
3. Pour everything into the baking dish and bake for 45 minutes or until the top has browned and the middle comes out with a clean knife.
4. Let it cool before serving.
