Cinnamon & Honey No-Oats Granola

Lesson 1

This no-oats granola is baked with honey, cinnamon, sea salt and coconut oil for a deliciously sweet, salty and crunchy topping for yogurt, oatmeal or just as it is.


Ingredients 

1 8oz bag chopped pecans

1 8 oz bag slivered almonds

6oz unsweetened coconut flakes

1.5 TBS cinnamon

2 TBS honey

1 TBS sea salt

4oz dried cranberries

coconut oil spray


Directions

1.  Preheat the oven to 250 and line a baking sheet with tin foil.

2.  In a large bowl, combine all ingredients except for the cranberries and coconut oil, then spread evenly in one layer on the baking sheet.  Spray everything with coconut oil.

3.  Bake for 30-35 minutes, stirring once halfway through.  Bake a few minutes longer for a crispier granola.  Let cool for 30 minutes to an hour.

4.  Stir in cranberries, taste for more salt and store in an airtight container for up to 2 weeks!
