Easy Spiced Chicken

Lesson 2

Cumin, chili powder, paprika, garlic powder, salt, pepper, red pepper flakes and a sprinkle of coconut sugar are what goes into making this spiced chicken dish.  Slice it over a salad, shred it to make sandwiches or to put in quesadillas, or serve it with sautéed veggies.


The flavors come together so well, and the spiciness isn't overwhelming on the chicken because of the sugar that's mixed in to the seasoning and becomes caramelized.


Once you've seasoned both sides, it simply goes in the oven at 350 for 25-30 minutes or until the chicken is cooked through, then quickly broiled for a caramelized finish.  This spiced chicken is so easy!


Serves 2

Ingredients


2 4oz boneless, skinless chicken breast, fat trimmed off

1/2 TBS garlic powder

1 TBS black pepper

1/2 TBS salt

1/2 TBS mustard powder

1 TBS chili powder

1 TBS cumin

1/2 TBS coconut sugar 

2 TBS regular paprika

1/4 tsp dired oregano


Directions


1.  In a bowl, combine all the ingredients for the seasoning.

2.  Set the oven to 375 and line a baking sheet with tin foil.  Place chicken breasts on the sheet and rub with a small amount of olive oil.

3.  Sprinkle the rub over the chicken and rub it in.  You may have leftover rub, so store that in an airtight container in the fridge.

4.  Bake the chicken for 25-30 minutes, or until the chicken is cooked through.

5.  Set the broiler to high and broil the chicken for 3-5 minutes, or until the top starts to brown and caramelize.

6.  Serve with anything and enjoy!
