Earthy Andy’s Mermaid Bowl

I love Earthy Andy's plant-based recipes, and you'll find many recipes in here adapted from her.  She runs a challenge called Plants Over Processed, and her meal ideas are so yummy.


This recipe was adapted from her recipe, but updated to fit the needs of this detox.  You can make a big batch of the dressing and store it for the week, and meal prep the potatoes ahead of time, so throwing this all together is a breeze.


Toss all of this in a bowl:

1 C earthy greens of your choice like lacinato kale

1/2 C cooked purple or regular sweet potatoes

1/8 C crushed pistachios

1/4 C sour kraut (optional - a great probiotic)

1/2 C chopped purple cabbage

1/2 C blueberries

1/8 C pepitas


Then make the Sweet Mustard Dressing:  

Combine 1/3 cup your choice stone-ground mustard with 1/4 cup raw apple cider vinegar, 1/2 teaspoon coconut sugar, 1 teaspoon black pepper and 2 tablespoons water. Blend in a small blender and drizzle onto your salad. Store in refridgerator in an air tight container!
