Kale Caesar Salad

Lesson 4

This is a great salad to throw together for a quick snack or light meal.  You can add protein to this or have it as is.  

The Kale

DSC_0473Lacinato kale, also known as dinosaur kale, is so easy to slice into thin strips and doesn’t have to be massaged like other types of kale.  It's the most popular type of kale for salads and has a medium amount of flavor to it.  Lacinato is also really great in soups.


When you use a curly green kale, you will want to massage it with some olive oil in your hands for a few minutes to soften up the leaves, but  you won't have to do this with the lacinato kale.  

The Caesar Dressing

Because this is a 30-day detox and dairy is out of the question along with sweeteners like honey and maple syrup, many homemade dressings just won't work.  I have found a solution though, from a brand called Primal.  They have a variety of different dressings, sauces and marinades, and their Caesar dressing in particular checks off all the boxes for this detox month.  

This brand can be found on Amazon, Target, Thrive Market, chain grocery stores, Whole Foods and other organic food stores.


Simply slice the kale leaves into thin strips and discard the stems, then toss with shredded carrot and sliced almonds with about 1 TBS of this dressing, for a super quick and delicious meal.
