Spicy Ro-Tel Chicken
A spicy chicken and noodle dish not for the faint of heart - this is three alarm spicy, but oh so yummy (and ridiculously easy to make).
Lock and load everyone, this ones spicy! If you have never experienced the greatness of Ro-Tel Tomatoes with Green Chiles, then you're missing out. It's got spice for sure, but the egg noodles, chicken and parmesan cheese certainly calm it down a bit. I made this for Ryan the other day when I had almost nothing to work with in the kitchen plus the fact that I had no intentions of cooking anyways! A simple, quick meal was exactly what I needed, and boy did I serve up a good one!
So go pour yourself a glass of milk (or wine) and enjoy this tasty masterpiece for an easy weekday meal.
- 1/2 bag of extra wide egg noodles, cooked according to directions
- 2 cans Ro-Tel with green chiles
- 2 boneless, skinless chicken breasts, trimmed and sliced 1/2in thick
- 1 TBS red pepper flakes
- 1/2 TBS paprika
- 2 garlic cloves, minced
- 1 small onion, thinly sliced
- parmesan cheese
- In a pan, heat some olive oil and add chicken, red pepper flakes, paprika and garlic. Brown both sides of the chicken, stirring to coat spices over chicken.
- Add onion and continue cooking for 10 minutes, allowing the onions to carmelize.
- Pour Ro-Tel cans into the pan and bring to a simmer. Cover and let cook another 10 minutes.
- Stir in noodles and mix everything together. Add salt & pepper to taste.
- Serve with parmesan cheese
