Spicy Rotel Chicken

A spicy chicken and noodle dish not for the faint of heart - this is three alarm spicy, but oh so yummy (and ridiculously easy to make).

Lock and load everyone, this ones spicy!  If you have never experienced the greatness of Ro-Tel Tomatoes with Green Chiles, then you're missing out.  It's got spice for sure, but the egg noodles, chicken and parmesan cheese certainly calm it down a bit.  I made this for Ryan the other day when I had almost nothing to work with in the kitchen plus the fact that I had no intentions of cooking anyways!  A simple, quick meal was exactly what I needed, and boy did I serve up a good one!

Spicy Ro-Tel Chicken

Serves: 2-4
Ingredients
  • 1/2 bag of extra wide egg noodles, cooked according to directions
  • 2 cans Ro-Tel with green chiles
  • 2 boneless, skinless chicken breasts, trimmed and sliced 1/2in thick
  • 1 TBS red pepper flakes
  • 1/2 TBS paprika
  • 2 garlic cloves, minced
  • 1 small onion, thinly sliced
  • parmesan cheese
Instructions
  1. In a pan, heat some olive oil and add chicken, red pepper flakes, paprika and garlic. Brown both sides of the chicken, stirring to coat spices over chicken.
  2. Add onion and continue cooking for 10 minutes, allowing the onions to carmelize.
  3. Pour Ro-Tel cans into the pan and bring to a simmer. Cover and let cook another 10 minutes.
  4. Stir in noodles and mix everything together. Add salt & pepper to taste.
  5. Serve with parmesan cheese
