Pomegranate Lentil Salad (GF)

A cold salad that can be made ahead of time for an easy and quick meal or side dish.  There's absolutely no cooking at all, which makes this the perfect hot-weather recipe!

This recipe came together for two reasons - one, I had a package of pre-steamed lentils from Whole Foods in the fridge that needed to be used, and two, I have an overwhelming amount of parsley in my garden right now and there's only so much tabbouleh I can have!

With fresh herbs including mint, a zesty lime dressing and sweet, crunchy toppings like cucumber, sunflower seeds and sweet-tart pomegranate seeds, this salad is bursting with flavor...and it's a beautiful dish, so serving it will guarantee ooooos and ahhhhssss!!

Look for pre-packaged steamed lentils in the produce section of most grocery stores, which not only saves you time on cooking them for this, but also gives you guaranteed perfect lentils every time.

If you can't find pomegranate seeds, you could also try dried cranberries or cherries.
