Roasted Cauliflower
A quick and easy side dish that is oh-so savory and delicious..with little effort! Pop these in the oven and forget about them while you whip up the main dish!
After a beautiful weekend vacation up north in the snowy mountains, I came home to a head of cauliflower sitting in my fridge begging for help. Give it two more days and it would've been a goner. So what to do?!
In five minutes, they were in a baking dish, roasting in the oven. Easy enough right? Problem is, I'm making taco salad tonight, which is not a good combination. If you run in to this situation as I do many times, just save them for tomorrow in a dinner or throw them into a salad for lunch! Ooooooor, just eat them like candy which is what I did after taking these photos. So much better than letting food go to waste!
These little babies are light, buttery without the butter, yummy little nuggets of goodness.
Now I know there are some cauliflower haters out there, but you won't be disappointed with these! However my motto is, if you don't like them, then more for me!
- 1 large head cauliflower
- 1/4 C good olive oil
- 2 tsp garlic salt
- 2 tsp ground black pepper
- Preheat oven to 400.
- Cut the cauliflower into florets and place in a baking dish, preferably with as many flat bottoms facing down as possible. Stir in oil, salt and pepper and bake for 45 minutes, stirring halfway through.
