Tequila & Lime Shrimp

This simple summer dish takes just minutes to prepare - just cut the veggies, throw them in the oven for 30 minutes, saute the shrimp for 3 minutes with seasoning and you're done!

I found this in the seafood department at Whole Foods and loved it for it's low-sodium content and easy ingredients list.
When searching for a good seasoning for whatever you're cooking, be sure to read the labels. If the first ingredient is salt then put it down and walk away. They say the first few ingredients in a list are usually what the highest concentration of that particular item is, so if it says salt, you're bound to get a ton of salt.
Roasting the Vegetables
I seem to be on a roasted vegetable kick lately, because it's literally the only thing I serve as a side with dinner, then eat it as a snack the next day.
Roasting the veggies minimizes the amount of oil you use and brings out the true flavor of each veggie while giving it a perfect caramelized texture.
Drizzle just enough olive oil to lightly coat the veggies and only roast them until they are slightly cooked with a slight browning. I like to heat the oven to a really high temperature, around 450, and roast for 20-30 minutes. It's an easy and fast way to cook them pe rfectly!The next day I had a ton of leftovers, so I threw the shrimp and veggies over a salad for a healthy, tasty lunch.
The recipe is so simple you don't even need a recipe card - this is just a great "light bulb turning on over the head" kind of meal! Simply dust the seasoning over the shrimp, saute it in some olive oil in a heated pan for 3-4 minutes and enjoy!
