Simple Baked Salmon with Herbs (GF)

A simple baked salmon recipe with a delicious lemon and herb sauce.  The sauce is perfect drizzled over the salmon with a side of arugula for a healthy, easy dinner in about 20 minutes or less.

Salmon is an excellent source of omega-3's, protein, B vitamins, antioxidants and potassium.  A 3-4 ounce servings has been found to lower your risk of heart disease and maintain a healthy weight.  While you shouldn't have more than 1-2 servings of fish a week, fish is a delicious option for a healthy meal.

This simple salmon recipe can be cooked in the oven, on the grill, on the stovetop or even in an air fryer!  

I served this two ways - one over an arugula salad and another with roasted carrots.  Both were incredible!  The peppery arugula was perfect for the bright, citrusy flavors of the herb sauce, which also worked well with simple roasted carrots as well.  

Any leftover sauce can be saved for chicken or more fish or add some olive oil to make a true salad dressing.
