Torn Sourdough Croutons

We need to talk about croutons. They are so incredibly easy to make and store well in a plastic bag for up to three days after making.  I feel as if this needs to be a public service announcement.  

It wasn't until today that after enjoying some Papa Pomodoro Soup with Ryan did I realize that most of the world hasn't thought of making their own croutons!  It's so much healthier to make your own foods from scratch and this is one recipe that is so easy and simple, I just have to share it with you.

Creamy White Bean & Kale Soup

I love this soup for so many reasons.  It was adapted from a recipe out of an Ina Garten cookbook I just received, and I can't stop making it!  I put my own spin on it with extra garlic and hearty kale.  

I've also used broccoli rabe in this as well which gives it a more bitter taste, but never the less delicious.  If you're not a fan of bitter broccoli rabe, then I recommend sticking with the kale.  It's an easy way to sneak some rich leafy greens into your meal.

Roasted Winter Vegetable Salad with Crispy Halloumi Croutons

Winter is slowly creeping up on us in New England.  When you start waking up and seeing your neighbors roofs dusted in white, you know it's beginning.  

The smell of a wood burning fire wafting through crisp air, with the crunch of leaves under your boots and the grey skies looming up above, makes me just want to snuggle down on my sofa under a big blanket and not come out until spring.

Grilled Vegetable Fajitas

When it comes to having a BBQ when you’re trying to be a vegetarian, things can get tricky – especially if you’re like me and hate tofu…

We love veggies and black bean burgers, but that get’s old after a while.  So instead, we opt for grilled vegetable fajitas.  I made a quick tomato-avocado salsa, grilled some corn on the cob and called it a meal, and boy was it delicious.  The next morning we fried up some eggs and had the same thing again, only a breakfast fajita instead!

Buttery Linguine with Shredded Striped Bass

Honestly, I was skeptical of this the minute I saw the raw filet sitting on my counter.

Now, I have eaten a lot of striped bass in my day thanks to the super talented fisherman I get to call my future husband, but when I saw this I really wasn’t so sure.  And you know you’re with a fisherman when he brings home the filets, nape and all.

Lemon Broccoli & Mushroom Grain Bowl

Growing up, there were always a few recipes my Mom kept on hand to cook week after week.  They were simple, no-brainer recipes that tasted delicious and gave all the comforts of home.  Nowadays, I’m on my own path, and still in need of those same kind of recipes, only more plant-based.  Grain bowls are wonderful because they make anything into a meal, so I always keep plenty of grains around for meals.
