My Top 3 Favorite Vegan, GF Salad Dressings
These are my go-to salad dressings when I want something vegan, gluten free, dairy free and low glycemic. The dressings work on salads, burrito bowls and Buddha bowls and are a great meal prep idea. Salads are my go-to for meal prep and I tend to have at least one giant salad for lunch and/or dinner. They may sound boring, but when you fill them up with your favorite goodies and top it with a delicious dressing, the salad isn't so depressing anymore.
Store bought dressings can be full of sugar, artificial colors, fat, sodium and processed ingredients, and even ones with the word "organic" on the bottle aren't always going to be the healthiest pick.
Making your own dressing at home sounds like a big hassle, but these 3 salad dressings are so, so easy. What's even better is that they are gluten free and vegan, giving you more of the plant-based goodies your body craves and less of all the other stuff.
Don't get me wrong, I love a little Greek Yogurt mixed with salsa for a taco salad sometimes, but once in a while it's good to have a plant-based, no animals involved kind of meal.
Here are my top 3 favorite vegan, GF salad dressings I keep on rotation all the time:
Creamy Avocado Dressing
- 1 ripe avocado
- 1 TBS olive oil
- 1/2 C cilantro
- juice of 1 lime
- 1/4 tsp each salt and pepper
- 2 garlic cloves
- 1/4 C water
Blend all ingredients and serve.
Pomegranate Dressing
- 1/2 C pomegranate juice
- 1/3 C apple cider vinegar
- 1 TBS grated fresh ginger
- 1/4 C olive oil
- 1/4 tsp each salt and pepper
Whisk all ingredients together in a bowl and season with salt and pepper to taste.
Sweet Mustard Dressing
- 1/3 cup stone-ground mustard
- 1/4 cup raw apple cider vinegar
- 1/2 teaspoon coconut sugar
- 1 teaspoon black pepper
- 2 tablespoons water
Blend in a small blender and drizzle onto your salad.
