A dairy free version of one of my favorite comfort foods, this creamy cashew based Cajun sauce is tossed with zucchini noodles and crisp tender vegetables, then sprinkled with a miracle seed - Hemp Hearts, for a totally delicious and comforting meal thats vegan and gluten free.

Homemade Cajun Seasoning Recipe

For the Cajun seasoning, you could either use your favorite brand, or make a quick one yourself with pantry seasonings you probably already have on hand.   To make the seasoning:

1 TBS each of: garlic powder, Italian seasoning and regular paprika.
1/2 TBS each of: black pepper, dried basil, onion powder⁣
1/4 tsp salt and cayenne powder⁣
Mix together and store in an airtight container.

Hemp Hearts - what are they?

Hemp Hearts are an excellent source of protein and fiber.  They are also an excellent healthy fat source, full of omega 3's and 6's, which can also help fish inflammation.  They are also rich in potassium, magnesium, calcium and iron and packed with antioxidants.  These tiny little seeds are powerhouses of energy and nutrients.  I like to sprinkle hemp seeds over salads, smoothies, dishes like this and just about everything under the sun!  

The Recipe

You can add in or substitute any vegetables that you prefer, or add in diced chicken or shrimp for more bulk if you want.  The Hemp Hearts are a great addition regardless, and give a little extra crunch, so I highly suggest using them.
